Chia Compote Chocolates:
8 oz. raspberries- I used frozen
3 T. chia seeds
2 T. maple syrup
1/2 c. non-dairy chocolate chips (I used @eschocolate )
1 tsp. coconut oil (optional)
Options freeze dried strawberries to top

Mash up your raspberries in a small pot over low heat. Stir in your chia seeds and maple syrup. Wait for the berries to be fully broken down and for all ingredients to be mixed together well. Remove from heat and wait for at least 15+ minutes for the chia seeds to hydrate and mixture to thicken.
.
Make “patties” on a freezer-safe plate covered in parchment paper: Spoon about 2 T. of chia compote and gently press into a patty form. I made 6 in total.
.
Freeze for 1 hour. Melt the chocolate chips and coconut oil in a small pan or microwave. Dip patties in chocolate and immediately top them with crushed freeze dried strawberries. Freeze until fully hardened and enjoy! The patties may need to be left out of the freezer for a few minutes before soft enough to cut through.🍫

Chia Compote Chocolates:

Spicy orange sesame bowl.🌶️ PERFECT for ingredient prepping at the start of the week. Can be eaten as a salad like this or you may add rice/buckwheat noodles or a grain.👇🏽

🍊Shredded green cabbage and kale (I used a mandoline for the cabbage and thinly sliced the kale)
🍊Cilantro
🍊Sliced jalapeño
🍊Edamame
🍊Tofu pressed, cubed, and tossed in 2 T. of tamari and a drizzle of spicy sesame oil. Baked at 425 for about 20 min.
🍊Toasted pepitas
🍊Overly roasted gochujang cashews 😂 (not worth sharing)
🍊Mandarin oranges
🍊Chopped scallions
🍊Sesame seeds

Dressing: (makes enough for a few days)
Juice of 2 oranges
4 T. tamari
4 T. rice vinegar
3 T. maple syrup

To name just a few…
🍅Tomatoes: contain the fat soluble antioxidant lycopene and the combination of tomatoes and a healthy fat (tofu) boosts the absorption of lycopene in the body.
🥬Kale: part of the cruciferous family, kale contains the compound sulforaphane which has a myriad of benefits in the body including acting as an anticancer agent, promoting brain health, and managing type 2 diabetes.
🧅Alliums: the family containing garlic, onions, scallions, etc. also act as an anticancer agent, specifically against breast cancer. And when paired with the cruciferous family, you’ve got quite the power couple.
⬜️Tofu: organic tofu is packed with protein and contain phytoestrogens which help ward off the powerful animal estrogens. Soy phytoestrogens can help to lower breast cancer risk, breast cancer return risks, and menopausal symptoms.
🌱Sauerkraut: a fermented food that aids our gut health by feeding our good gut microbes. It contains both probiotics and prebiotics.🦠
